So, currently, Zitadel only uses SMTP basic auth (as you've mentioned). We do have an issue on github that aligns with your use case - It might be helpful to share this here and also upvote it: https://github.com/zitadel/zitadel/issues/5424

You could use an SMTP relay hosted on-prem!

I've also seen some community chatter around using sendgrid, mailgun, etc!
